- 2–3 jalapeños, seeds removed and finely diced
- 1 cup breadcrumbs
- 2 large eggs, lightly beaten
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 2 teaspoons smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup (for glaze)
- 2 tablespoons brown sugar (for glaze)
- 1 tablespoon apple cider vinegar (for glaze)
- 1 teaspoon hot sauce (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
- Sauté onions in olive oil until translucent (3-4 minutes), then add garlic, bell pepper, and jalapeños and cook for 2-3 more minutes.
- In a large bowl, combine ground beef, sautéed vegetables, breadcrumbs, eggs, ketchup, Worcestershire sauce, Dijon mustard, and all spices. Mix gently until just combined.
- Transfer mixture to prepared loaf pan or shape into a loaf on a parchment-lined baking sheet.
- Whisk together glaze ingredients and spread half over the meatloaf.
- Bake for 40 minutes, then add remaining glaze and bake for additional 20-30 minutes until internal temperature reaches 160°F (71°C).
- Rest for 10-15 minutes before slicing and serving.
