Ingredients

  • 2 pounds ground beef (85% lean)
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, finely chopped
  • 23 jalapeños, seeds removed and finely diced
  • 1 cup breadcrumbs
  • 2 large eggs, lightly beaten
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup (for glaze)
  • 2 tablespoons brown sugar (for glaze)
  • 1 tablespoon apple cider vinegar (for glaze)

Instructions

  • Preheat oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
  • Sauté onions in olive oil until translucent (3-4 minutes), then add garlic, bell pepper, and jalapeños and cook for 2-3 more minutes.
  • In a large bowl, combine ground beef, sautéed vegetables, breadcrumbs, eggs, ketchup, Worcestershire sauce, Dijon mustard, and all spices. Mix gently until just combined.
  • Transfer mixture to prepared loaf pan or shape into a loaf on a parchment-lined baking sheet.
  • Whisk together glaze ingredients and spread half over the meatloaf.
  • Bake for 40 minutes, then add remaining glaze and bake for additional 20-30 minutes until internal temperature reaches 160°F (71°C).
