- 1 cup panko breadcrumbs
- 2 large eggs, lightly beaten
- 2 tablespoons Worcestershire sauce
- 2 tablespoons Dijon mustard
- 3 cloves garlic, minced
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3 large yellow onions, thinly sliced
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1 tablespoon brown sugar
- 1/4 cup beef broth
- 1 tablespoon balsamic vinegar
- 1 cup Gruyère cheese, shredded
- 1/4 cup fresh parsley, chopped
- 1/2 cup ketchup
- 1 tablespoon brown sugar
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
Instructions
- Caramelize onions in butter and olive oil with brown sugar for 25-30 minutes. Add beef broth and balsamic vinegar in the final minutes.
- Preheat oven to 375°F. Combine ground beef, breadcrumbs, eggs, Worcestershire sauce, Dijon, garlic, thyme, salt, and pepper.
- Form half the meat mixture into a loaf shape on a lined baking sheet. Create an indentation down the center.
- Fill with half the caramelized onions and half the cheese. Top with remaining meat and seal edges.
- Mix glaze ingredients and brush over meatloaf.
- Bake for 45 minutes. Top with remaining onions and cheese, then bake 15-20 more minutes until internal temperature reaches 160°F.
- Rest for 10 minutes before slicing. Garnish with parsley before serving.
