Description

A gourmet twist on classic meatloaf featuring caramelized onions and Gruyère cheese for the rich flavors of French onion soup in every bite.


Ingredients

  • 2 pounds ground beef (preferably 85% lean)
  • 1 cup panko breadcrumbs
  • 2 large eggs, lightly beaten
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 large yellow onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 1/4 cup beef broth
  • 1 tablespoon balsamic vinegar
  • 1 cup Gruyère cheese, shredded
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon Worcestershire sauce

 

  • 1/2 teaspoon garlic powder

Instructions

  • Caramelize onions in butter and olive oil with brown sugar for 25-30 minutes. Add beef broth and balsamic vinegar in the final minutes.
  • Preheat oven to 375°F. Combine ground beef, breadcrumbs, eggs, Worcestershire sauce, Dijon, garlic, thyme, salt, and pepper.
  • Form half the meat mixture into a loaf shape on a lined baking sheet. Create an indentation down the center.
  • Fill with half the caramelized onions and half the cheese. Top with remaining meat and seal edges.
  • Mix glaze ingredients and brush over meatloaf.
  • Bake for 45 minutes. Top with remaining onions and cheese, then bake 15-20 more minutes until internal temperature reaches 160°F.

 

  • Rest for 10 minutes before slicing. Garnish with parsley before serving.
