Description

A quick and healthy 15-minute meal featuring crispy air-fried chicken cubes served over fresh vegetables with a light lemon-olive oil dressing. Perfect for busy weeknights or meal prep.


Ingredients

  • 1 pound boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • 6 cups mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • 1 avocado, sliced
  • ¼ cup crumbled feta cheese
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard

 

  • 1 clove garlic, minced

Instructions

  • In a bowl, combine chicken cubes with olive oil, garlic powder, paprika, onion powder, oregano, salt, and pepper.
  • Preheat air fryer to 380°F (193°C) for 2 minutes.
  • Place seasoned chicken in a single layer in the air fryer basket.
  • Cook for 8-10 minutes, shaking halfway through, until chicken reaches 165°F (74°C).
  • Meanwhile, combine mixed greens, tomatoes, cucumber, and red onion in a large bowl.
  • Whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper for the dressing.
  • Toss vegetables with two-thirds of the dressing.
  • Top salad with air-fried chicken, avocado slices, and feta cheese.
